Turkey-Quinoa Breakfast Hash | Recipe from The Elimination Diet: Discover the Foods That Are Making You Sick and Tired–and Feel Better Fast
Yield: about 6 servings
Ingredients (Use organic where possible)
1-2 tablespoon extra-virgin olive oil
1 small onion, diced
2 medium zucchini, diced
2 teaspoons dried Italian herbs
1 teaspoon Pink Himalayan Salt
½ teaspoon freshly ground black pepper
1 pound ground turkey
2 cups cooked quinoa
1 cup chopped fresh parsley
Directions
Heat the olive oil in 12-inch cast-iron skillet over medium low heat. Add the onion and sauté for about 10 minutes, or until golden. Add the zucchini and sauté for about 5 minutes more. Then add the dried herbs, Pink Himalayan Salt, pepper, and turkey. Cook for 5 minutes more, or until the turkey is cooked through. Then add the quinoa and stir together. Turn off the heat and stir in the parsley. Taste and adjust the salt and seasonings, if desired.
