Avocado, Apple, Carrot Salad

Ingredients:

–  Bag of organic salad mix from Trader Joe’s – 1 bag feeds 2. Mix and match there are so many options: Arugula, Baby Lettuce, Butter Lettuce & Radicchio

–  Handful of organic baby carrots per person – sliced, chopped, grated…you pick

–  Half of an organic apple per person – chopped. Leave on the skin.

–  1 Half of an organic avocado per person – sliced

– Stalk of organic celery per person – chopped or chunked

–  2 Tablespoons of organic raw hempseeds per person (Below is an image of the product I buy.)

–  ¼ cup cheddar cheese – chunked. Make sure to find one that states there are no growth hormones or   comes from New Zealand or Europe. All easy to find at TJs.

–  ¼ cup organic chicken – chunked

–  Choice of dressing. For busy working peeps I recommend the TJs Champagne Pear Vinaigrette. Shocking I know, its ready-made…ok, no one is perfect HOWEVER it is in the refrigerator section of the store and has a short shelf life which tells us there are minimal preservatives. It’s always best to make your own when time allows

Directions:
Plate choice of lettuce.  Add the rest of the ingredients.  Nosh.
