Gluten-free Colored Rice

Ingredients

2 cups TJs Sprouted Organic California Rice (Brown, Red & Black)

4 cups water or broth

4 stalks of Celery, chopped

8 Organic Crimini or Baby Bella Mushrooms, thickly sliced

2 Organic Cloves of Garlic, minced

1 tablespoon Organic Rosemary, remove leaves from stem and finely chop

Pink Himalayan Salt & pepper to taste

2 tablespoons of coconut oil


Directions:

Bring water or broth to boil, add rice. Cover and reduce heat to low for 25 minutes. Remove from heat and let stand for 5 minutes before fluffing. While rice is cooking,  prep veggies. In a stainless fry pan, add coconut oil and cook mushrooms, celery, garlic and rosemary until softened. Turn off heat, add rice to veggies and toss.
